Dr. Emily has compiled some of her favorite meals that she and her family enjoy on these cold, wet days!  We’ve been lucky with some mild winter weather here in Tulsa so far, but it’s been a bit colder and rainy lately.

  1. 12-Minute Chicken and Broccoli
    1.     1. This is a girl after my own heart.  Most of the food she makes (at least of the recipes I have tried) isn’t pretty, but it sure does taste good and that’s the important part! (Oh and it’s healthy too!)

      1. INGREDIENTS
        *this makes 2-3 batches*
        1.5 cups canned pumpkin
        1 egg
        1 teaspoon vanilla
        1/2 cup vegetable oil
        1 teaspoon cinnamon
        1 teaspoon baking soda
        1 teaspoon baking powder
        1.5 cups sugar
        1/2 teaspoon salt
        2.5 cups flour
        1 cup chocolate chips*
      2. DIRECTIONS
        in a large mixing bowl, combine pumpkin, eggs, vanilla, vegetable oil, nutmeg, cinnamon, baking soda, baking powder, sugar and salt and mix well. add flour and mix to combine. stir in chocolate chips. drop dough onto ungreased cookie sheets and bake at 350 degrees for 15 minutes. *batter will be sticky, so use a spoon to drop dough onto baking sheet. they are so moist at delicious!
